The one in my (a bit over-saturated) picture is the earlier version of the Bally's $5 with the original Radiant Red - it is a deeper more saturated red than the newer version of Radiant Red. They really are different colors.
It appears the ones you have are the newer Radiant Red, which is paler compared to the older version.
Another way to tell is the smaller font size for LAS VEGAS, NEV. on the more recent version with the new lighter Radiant Red.

Not a perfect examples, (iPhone has trouble getting radiant red and other colors right) but the pictures below shows one older version of the Bally's $5 with the original Radiant Red and larger LAS VEGAS, NEV. font size.
The rest of the $5s in the pics are the newer version like the ones you have.

It is possible that it coincided with the reduction of lead content, but not sure.
ChipGuide has an issue year of 1999 for the chips (not sure of the accuracy).
I have read that Paulson began phasing out lead in 1998.

Believe it is Mint Green / Canary spots

After checking weights, I suspect this change did coincide with the removal of lead and color change Paulson made to Radiant Red.
The newer version $5s are ~9g and the older original Radiant Red $5s are ~9.4g
Best guess is the older ones have some lead content.

another correction
The edgespots on the older $5 version are Canary and Mint Green (appears slightly darker than newer Mint Green).
The newer $5 version changed from Canary to Yellow and has the newer Mint Green (matched it to a Empress Star T25k edgespot)
