@Mr Tree ’s Paymasters, Vineyards, almost naked ladies (All-American Girls?), and @MegaTon44 ’s mixed Chipco set come to mind immediately for me.

Lots of cool Tina sets, but I’m putting those in a separate category.
 
As others have mentioned: the @Mr Tree complete Paymaster story (and real racetrack table) is beyond epic, and shows just how amazing and inspired some chipsets can be. All new chippers should check out the Hall of Fame for more info on amazing sets like this!

Chip Co chip set. Custom designed and purchased directly from Chip Co about 20 years ago. Never washed/cleaned once and still good to go. I will say that the originally designed orange $500 created dirty stack problems with the red $5s so I had to re-order the $500s in white. I was such a chipping amateur back then.
