I have a CPS set that I want to put use in a cash game, although I have the tournament denominations. The game is going to be .25/.50 and I have:

125 green 25
225 black 100
125 blue 500
85 yellow 1000
25 Orange 5000

I'm considering just avoid using the blue 500 (as $5) and skipping to using the yellow 1000 (as $10)
thoughts on if this would be difficult to play with such a wide spread from $1 to $10?

How big are your games? Between the 25, 100 and 500 chips, you have over 900 dollars. Do you think that you'll get that much in play? With a $50 buy-in and 8 people your only at $400, with plenty left for rebuys. I wouldn't skip the $5 chips. If anything, I would just play them as is and use the $10 or $50 chips as needed. You could reserve them for rebuys, or if somebody buys in for $100 you can use a $50 chip in addition to the other. Having a $10 chip isn't unheard of, but I think going from $1 to $10 may be a bit less common.

The blue on the 100 chips are very similar to the blue used on the 500 and look a lot alike. I would not recommend using them in the same set. I'd skip to the yellow.
