I'm wanting to do a round, with an LED betting line, something like @Skagglio or @Raphmivey.

I'm wondering what the best diffuser material is or where I can get about 3.5 foot of it :)

Cool! Excited to see the result. I used a sheet of transparent 3/16" white acrylic #2447 from a local shop. Mine came out to about $180. This would be an expensive option for you though since the sheet they use would need to be as big as the diameter of your circle unless you want seams. Raph is probably a better person to ask about betting line. There may be some type of flexible diffuser track on amazon.

What you need is flexible channel diffuser. Many models exist allowing you to bend the LED strip in the desired direction.
In my table I have 2x types. For one of them, the LED strip faces the diffuser so when you bend it you end up with ligths towards the inside of the circle/oval. That is used for the rail. For the other, the LED strip is slipped into the diffuser sideways, perpendicularly to the diffuser. It does not face the diffuser so when you bend it you end up with ligths perpendicular to the circle/oval surface. This is used for the betting line. This is the one you need. I dont remember the name but I brought mine on AliExpress you can find them fairly easily. See pictures attached.
