I just acquired the following tournament set and trying to figure out max tables/people it can support.

600x 5’s
500x 25’s
100x 50’s
485x 100’s
115x 500’s

Thoughts on these starting stacks?
10-10-7-2, or 10-6-8-1, or 15-9-12
Only using the 50's for rebuys if at all.
Guessing it supports around 50 players or total buyins including rebuys.

Should I buy more 500s, and get some 1k, 5k, 10k chips and if so how many?
Or do winners from each table compete the next day with a different chip set?

I've never hosted that big of tournament but would like to.

10/10/7/2 is T2K stack, which is perfectly fine. It's enough for 50 total players for T100K. You could color up the T5s, T25s, and T100s with 50 1K chips. If you wanted more T1Ks to allow for rebuys I'd also think some T5Ks to color up the T500s later would help. Blinds breakdown could be something like:

5/10
5/15
10/20
15/30
20/40
30/60
40/80
(Color up T5s)
50/100
75/150
100/200
150/300
(Color up T25s)
200/400
300/600
400/800
600/1200
800/1600
(Color up T100s)
1000/2000
1500/3000
(Color Up T500s if necessary)
2000/4000
3000/6000 (Projected end, no rebuys)
4000/8000
6000/12000 (Projected end, 1 rebuy/player)
8000/16000
10000/20000

If you don't allow rebuys, you could probably skip coloring up the T500s in the interest of time. It would probably be recommended to do so with T5Ks if you were to.

Regardless, don't bother with the T50s, and TD's (of which I am not one of) would probably suggest you not host such a large tournament, since even 2 tables is hard, and any more than 3 is nearly impossible without trusted people helping you.

(If anybody with experience could tell me if this is good advice, please let me know since I feel like I've got it down after reading so many articles).

Instead of bb being 10 20 40 for the first 3 levels go 20 30 40, avoid the doubling.

Doubling the blinds at the beginning is often said to be a bad idea. I'm in favor of 10/20, 15/30, 20/40 if you're looking to speed up the tournament. It is still very fast (and actually faster), but it is a more consistent blinds schedule. Ending rebuys after the first break is also better since it will only equal 20BB anyway, since it is only 5BB after the second break.
