For me it's actually a little of both. I really enjoy having multiple sets and getting them each into play, but that wasn't always the case.
I mainly host 2 different groups, a monthly tourney ("my game") and a micro stakes cash game that I share hosting duties with 1-2 others. For my tourneys, it took me a while to build, but once I built up my
PNY set sufficiently, I was very happy with using only that set for that game. We've played with that set for several years - very few in the group were chippers, but most appreciated the fact they were playing with really nice chips. This was also during the "downtime" in premium chipping ~8 years ago, where very few new set options were coming up (especially for tourney sets) and ASM was in the throws of the vegas era. With a "grail" set already in hand and nothing new popping up that I really liked, I was very content with using just this set.
For the cash game -
entirely different group. These guys love the bright & colorful options, and enjoy the rotation through different sets. They typically prefer ceramics over clays. So I've picked up several different sets over the years based on the group's preferences that we rotate through for this game - American beauties, crystal oysters, boardwalks, black sands, and eventually a starburst/mixed $1s set. Nothing on the super premium end, and the group enjoys putting each set into play.
Once
CPC arose from the ashes of ASM vegas and PCF helped re-spawn the chipping market, I started looking for opportunities for additional tourney sets to add to the
PNY only tourney rotation. It took particular opportunities / sets to break in (
CPC Rounders and the super cool dia de los muertos design), but now I have 5 sets available for that game as well.
