This may not help as I've only use it for hold em and omaha tournies, but the basic way I figure out length:

Imagine it's down to the last two players. How many BB would they have at what level? For instance, if we had 100 bucks in front of us and blinds were 5/10, we'd prolly be done very soon. Even easier is add up all the chips on the table and when roughly 3% is the size of the BB, the tourney will end very soon.

In stud with antes, I'd imagine it more comes down to the small bet and big bet size. Basically substitute the big blind for the big bet. My best guess is it will be over at level 11.
