I was thinking a Horeshoe or JACK but would consider others. A nice set as my wife like to play as well.
Maybe a 600 chip set.
do you all think I could get one built for around $1000 or under (newer condition)

I think it might be difficult to build a paulson set in newish condition for less than $2/chip. You’ll probably get the $1s at about that, but 5s and up? Not to mention fracs, fogetaboutit

You can consider CPC or Key West Stock chip too, they are Mint and new if you could just increase your budget by 10% more

Key Wests are great!! I just got a set myself - very impressed with them and like them a lot. (They are not cleaned and oiled in this pic)

I couldn't get the 1000's so I ordered some from chiplab.

I am very happy.
