I've got some older chips and some of the inlays have yellowed. Does anyone know what causes this? And is there any way to get rid of it?
 
Inlay replacement from @Gear is the only way I can think of.

On the other hand, I'm working on a vintage set design and wouldn't mind finding a way to re-create that effect.

Smoke a bunch of cigarettes next to them? :D

I don't know what the inlays are made of, but UV damage is really easy to reproduce. With some test chips and timer, you could set up a pretty easy experiment.

You could also try smoking them just like you would some barbecue. Use a cold smoke instead of a hot smoke. May take longer but you won't risk damaging your chips I'd think.
