For the most part for me... I would consider this a healthy 2 table set. Yes you can play 8/8/6/6/2 but even still you are short on T500s right off the break, so you would have to step back to 8/8/4/7/2 for 20k... and we don't have any more T100s to beef up the work horse after the T25s are removed.
So basically it is "doable" but will be a change making nightmare. Again that is a personal opinion... some here think that 8/8/6/6 is optimal for efficiency... but literally there will be change making by the third hand and won't stop!
Personally I want to run 12/12/5/6/2 starting stacks. Meaning we need
12 x 25 = 300 × 30 = 360
12 x 100 = 1200 x 30 = 360
5 x 500 = 2500 × 30 = 150
6 x 1000 = 6k x 30 = 180
2 × 5000 = 10k x 30 = 60
