I’m still a little hazy on how relabels like this work. What kind of process goes into labeling the hot stamps vs the inlays?

Hotstamps must be milled before you can put a label on the chip. For inlays, you can either overlabel or remove the original inlay and then apply the label. You can find tons of information on the forum about this theme.

OG dimes and quarters were hotstamped. 1s, 5s 25s => full inlay replacement.
 
The 5c's would be useless for my games, so I opted for the 10c's if there is a need to play a game at these limits.

To me, it seems like you should go $.05/$.25 or $.10/$.50.
Curious as to why the $.05 would be useless and the $.10 useable. After all, isn’t the $.10 just two $.05 chips?

In fact, the 10c won't do me any good either. My games are between 0.25/0.25 and 0.5/1. When building my set I got a good deal on the salmon solids rack and decided to add an extra denom. After much hesitation I decided to go for 10c, in case it would be appropriate to play a game at the lower limits.
