Redoing a table, looking for a good foam to replace the old one. Ive done this a couple times now and used carpet pad once and I believe a 1/4 or maybe 3/8 foam but I am not really happy with either. carpet pad was not a smooth surface and the 1/4 foam (might have been 3/8) was still too hard.
 
We used 6mm closed cell foam and it feels perfect for us. Once your playing surface is on that will give you a bit of extra softness as well.

Get closed cell regardless so if there any liquid spills, it won't soak through to the frame.
 
I would definitely use a closed cell foam; I have used Volara on 2 of the 3 builds I have done and very happy with it. I used neoprene on one and it was perfectly good, but I preferred the feel of the Volara. I used 1/4" but I would assume you could use 1/8" without any problems; it just might be more stiff.

Volara closed cell foam is what you want. 1/4" is the standard - no real reason to deviate IMO. As others have mentioned, Your Auto Trim is a great source - as is eBay.

About the only thing Volara leaves to be desired is if you set something heavy on it for too long, it will leave an imprint that may take a while to go away if it does at all.
