It was about 12 lbs pre trimming, 11 or so post trim. Significantly smaller than I am used to cooking.
I source my brisket from the local Costco, who up to about 6-8 months ago carried good quality prime grade brisket at around $2.99-$3.39/lb. However, for some reason they have complete stopped carrying prime grade brisket and only carry choice grade and they are charging more for it than they were the prime.
The selection of brisket has also been suffering, and the only suitable specimens in the case were under 13 lbs. All that said, neither I nor anybody else had any complaints about the final product.
Sooooooooo there's a chili competition during tomorrow's Halloween party. We thought, let's smoke the beans, fry some bacon, sear some steak with the bacon grease and chop it, then let it marry in the crock pot over night. There's a touch of heat. Just enough to make appearance, but not hot. They won't know what hit em.
