Watermelon Sugar
3 1inch cubes watermelon
Muddled
1.5 oz Tequila
0.5 oz Mescal
0.75 oz lime juice
0.5 oz simple syrup(1:1)
Shake with ice
Fine strain in to coupe rimmed with salt, sugar and cayenne
Recipe adapted from Phil at Mayahuel(NYC) from back in about 2010
Any clear ice suggestions/tips?
I don't have access to a cold draft ice maker

Tap water. The trick is unidirectional freezing with a well so the bubbles can be pushed out.

My only experience with bourbon is Bulleit, Jim Beam, and Evan Williams. I liked Bulleit more than the other two. The EC is my favorite so far.Man that EC Small Batch is good stuff. Last night I had a couple OFs with Scrappy's Firewater bitters. Tasty!
