Also included roasted asparagus and mushrooms. Unfortunately, just as dinner was ready, we caught not 1, not 2, but 3 calls back to back. The potatoes survived, and the filets were cooked sous vide (so they remained perfect), but the other parts... well all you really need is meat and potatoes.
 
First try with picanha last night. I don't have a rotisserie, so I cut it into steaks and slow cooked it on the grill to melt the fat cap and then went for a fast sear over the coals. Topped with a sauce of lemon, lime, coriander, cumin, olive oil, and mint.

Side of mashed yuca and some steamed peas (because the plate needed some color). Yuca was also new to me (I've had it fried before but didn't make it).

Picanha was pretty good for a budget steak ($8.99/lb), but I wouldn't quit ribeyes or tenderloin for it.
 
I don’t make gumbo often because it literally takes the entire day, but man is it delicious. It’s a chicken, sausage, shrimp and crab gumbo. Served with some filet mignon, asparagus and a baked potato. Washing it down with a 2018 Quilt Cabernet.

Any other day I would agree with you, but for a NYE dinner it has to be more! Gumbo is definitely enjoyable alone which is why I always make such a big pot. I will eat it through the entire week and then freeze some single and double size portions for future "emergency" meals.

Well not sure I'll ever host a meet up (wife would be happy about that) but if we do have a future meat up where cooking is on the table I'm in for that :)

It's all about salesmanship.

Show her this thread, and tell her you are thinking about inviting some other chefs over to share chef secrets. She'll get fed... and if poker happens to fill the remainder of the time, that's just "coincidence". :ninja:

Simple…cocktail fingers (blue crab claws), butter, old bay (or whatever), and Louisiana hot sauce. Super good…
