T-Giving Day for America - this is for Dinner, no surprise, but it was brined and cooked to perfection.

I smoke the ham and added some brown sugar - and Florida orange blossom honey.

Had 18 people for Dinner

and a few stragglers afterwards that wanted to play poker when Dinner had concluded - but we have enough for everyone no matter when they arrive - especially on Thanksgiving.

Officially done a with Thanksgiving. The last of the turkey is now in the pot pie. This may be better than the original meal!
 
Here are a few things I've made recently-ish

Orange chicken thigh sandwich w pickled peppers and garlic

@Mrs Poker Zombie's birthday rolled around this week. Let the kitchen carnage begin...

The menu. Starred items are what she ordered:

Amuse Bouche - a fancy way to say "get your tummy ready". Also a fancy way to use ingredients in more than one dish. Salmon caviar, creme fraiche, blini, squid ink, and peppered vodka.

Charred octopus, smoked onion and squid ink puree, red sea beans, and orange confit. Oranges are cooked in sugar and water for 24 hours. The result are edible peels. The water was reduced and will be used as an orange flavored simple sugar - can anyone say Old Fashioned? Little goes to waste around here.

Roasted pear salad with buffalo milk mozzarella and a balsamic reduction. Sadly, I forgot to plate the almonds which were lightly candied and roasted. :oops: The almonds make for a great snack though.

Littleneck clams with linguine and a spicy wine sauce. This was my personal favorite. Enough spice to say "this has a kick" but without a lingering burn. 2 Thai chills used, but not broken nor plated.

Ended with a chocolate mousse. I've made mousse before, using just cream and chocolate, but this time I also added egg whites. The result was a texture that was much better than the method without eggs. Topped with a Luxardo, and a little of the Luxardo cherry syrup (with a nod to @detroitdad 's old fashioned recipe).

WOW...........everything looks amazing. The charred octopus is very intriguing!
