Dinner Plans? (3 Viewers)

More burgers again lol

Tried potato buns for the first time today, best ones I’ve had yet. Brioche buns seem to shrivel too much. These held up well.

Special high fat burger mince from chuck and brisket.

Pickles, bacon, Monterey Jack and cheddar cheese. Combo of coopers ale bbq sauce on the bottom and burger sauce on top.

Meat nice and pink all the way through, how it should be.

Colleen shot it down. She doesn't care about my food photography lol.

Colleen and Jake both said that was the best stir fry that they have ever had. Including going out. The stir fry sauce was very simple

soy sauce
olive oil
sesame seeds
fresh ginger
garlic
black pepper
 
I think I'm going to make a BLT pizza for dinner tonight. Why not.

I'll make a light sauce out of Mayo, basil, garlic, ect.....We only have low fat mayo? Should that be fine?
 
I know in the past low fat cheese could produce terrible results (cheese formed a bulletproof shell), but that was back in the 1990s (have not used it since). Never cooked with low fat mayo.

Its all we have on hand and I don't feel like going out. It feels like the results of the dish could get screwed up cooking with low fat.
 
If you have a toaster oven, I would smear a little on a piece of bread and toast it before committing. I cannot imagine why it would fail, but I wouldn't have expected the cheese result, and the science certainly may have changed in the past 25+ years as low fat has gone more mainstream.

Post the results of the trial experiment.
 
Just got back from Ireland and really enjoyed the lamb dishes we had so I thought I would take a crack at it. Bought a boneless leg of lamb and went to work. White wine Dijon marinade with thyme.

Roasted with mashed potatoes and root vegetables (carrots and parsnips). Finished with an au jus. Turned out great. Leftovers are going in a Guinness pie.

I'm doing another "different" type of pizza tonight. I'm trying a tequila/lime Chicken taco pizza. The chicken is marinating for the afternoon. I made my own taco seasoning.

I'll post pictures up this evening!
 
Once you make your own taco seasoning, you will never ever want to use the prepackaged stuff that contains a shit-ton of salt and maltodextrin.

I've been making all of my own seasoning blends for a few years now. There isn't a comparison to store bought shit. I've made a few Moroccan seasoning blends. WOW..........talk about flavorful!!
