Dinner Plans? (5 Viewers)

I tend to disagree...

Onions belong cooked down into the sauce. Pizzarias cannot do it because of their "one sauce for all pizzas" concept, but like a spaghetti sauce, if you want onions, garlic, red pepper flakes, or really any spice*, you cook it into the sauce, you dont add it on late.

*notable exception being basil, which loses its flavor quickly when heated, so it should only be added to the pizza as a topping.

I love cooking them down in the sauces. For me. One of my absolute favorite pizza toppings is long, thinly sliced red onions. Damn..............Now I want pizza!!! And now that I have trained my palate to enjoy mushrooms. That is another favorite topping of mine :)

@Mrs Poker Zombie has a milestone birthday right around the corner (Sunday). Family members have travelled a combined total of 3,600 miles to get here for her X0th birthday (smart man never reveals a woman's age).

I work on Saturday, so I'm getting an early jump and par-cooking what I can. Squash soup started, I'll be making mayonnaise from scratch next. Both will hold well until Sunday and give me more time with the In-laws.

It's been a few days, but here's the first course from Mrs Zombie's Birthday...

For the first round, the Amuse Bouche is built from the night's dinner components. Everything here appears in a later dish. This was a Lemon Shrimp ceviche on garlic toast. Perhaps my favorite course of the night, and sadly not likely ever to occur again, because when you have no recipe, you dont get replicable science... you get art.
