At a certain point you don't think of it as a meal, and more of an education. We sat in the kitchen for the whole meal, got a tour of each station, and tasted every course offered, along with plenty of wine.

It's not for everyone of course. It's more like the custom Paulson set of the food world.

Well that's a totally different experience!!!!
 
Was there a service charge added already?
For the servers, tip was included. This prevents the wait staff from making out like bandits, while the kitchen staff does the heavy lifting. The extra tip was for the sommelier, whose price/wines was separate, and does not enjoy a share of the food service charge.
