I have put together a T5 base set of JACK using secondaries:

I have been searching for a chip that I can label to make a T2000 to make this set useable for 2 tables, but haven't found anything I super like yet. In an ideal world, the JACK $1000s would be awesome, but I think I can possibly find something that I would be happy with that also wouldn't break the bank. 43mm would be cool, but not necessary, and I am thinking orange, yellow, or blue as a base color.

Not yellow or orange -- too confusing for a T2000 chip. Blue is a much better choice.

There are some nice RHC sky blue 814-spotted WSOP Buy-in chips in the classifieds right now that would pair up nicely with your set.

Make sure you have enough T500s if planning on using a T2000 chip -- you'll need at least 9 in your 10k starting stacks (12/12/9/2, 8/8/10/2, etc.) -- without T1000s in play, just 5 or 6 T500s isn't enough, plus starting with 3x T2000 in a T10k stack is a really bad idea. Less of an issue with a T5-base set.

My plan was for T3k to T4k stacks, and to mainly use these T2k chips for the final stages of a 2 table tournament just to clear out some of the 500s. How do you feel about that?

With 20x T4000 T5-base stacks (10/10/12/5), your event will typically end no later than the 2000/4000 blind level. If using only T2000 chips for color-ups, you will have roughly 100x T500 chips and 16x T2000 chips in play at tournament conclusion, which is a decent total number of chips and mix of denominations. I would not use T500s for color-ups, or remove any from play.

Smaller fields and/or smaller starting stacks will require the use of T500s as color-up chips (to ensure there are enough in play at the end), and also lessen the need (or wisdom) of using T2000 chips.
