I agree, that is why I like Santa Ysabels. The irony - what first attracted me to them was the $2-on-fire, but the subtlety and calmness of the rest of the chips does appeal to me as well. Same with SUN-FLY's Asconas which I don't feel get the love they deserve.

Funny how tastes change. I was all about bubblegum chips, but have come to appreciate the softer chips.One final learning for tonight. Palettes are so pivotal in creating a sense of refinement. While loud, bright colors are generally amazing, there is also some joy in subtlety and restraint. I present to you, the “refined gentleperson’s California set.”
