I believe what people are describing as Honeycomb racks are Bourgogne et Grasset octagon shapped racks that are made for 43mm chips.

I'm sure others could share more sources to get these from. I have no knowledge whether they will fit the 8V's barrel wise.

I thought that was the problem. I believe these are 39mm chips, but the barrel is too tall to fit in a normal rack, leading to 19 chips per barrel, am I correct on this one?

I have unused wooden cases that fit 24 of the 8v's to a row (25 of any other chip). I'll just use my 1337 mathe skyllz and use what I have.

So - for example...this cheap rack would only fit 19 per barrel? Comments show that it fits "standard size poker chips".
