Garlic chipotle grilled pork tenderloin with baked potatoes

Decided to do some impromptu grilling last night.

Enjoying a double of Elijah Craig while the coals were getting hot.

Grilled Steelhead Trout, Jalapeno/cheddar sausages, potatoes, and a yellow pepper.

Seasoned the Trout with Rosemary, Thyme, kosher salt and peppercorns. Everything was very good.

That cookie shake looks fantastic! I love a good milkshake, I know it's NYC, but not sure it's worth $15. The wait wouldn't bother me as much as being disappointed in the shake.

The shake did not disappoint! Personally though no shake or hamburger is worth a two hour wait!

A medieval feast as we binge-watch Game of Thrones. A free barrel of chips to the first person that can guess the seasoning used on the zucchini (hint: it was a commonly available peasant food). Offer good for 24 hours from this post.

Tonight we eat Chicken Cacciatora

Chicken Cacciatora

This recipe is for 6 Servings.

Ingredients

1 Large onion, chopped fine

1 Stalk celery, chopped fine

1 Clove garlic

1/4 tsp sugar

A pinch of cinnamon

1/2 cup red wine (medium bodied such as a Chianti or Beaujolais)

6 Chicken breasts

1 Can tomato sauce

Flour

Salt to taste

Freshly ground black pepper to taste

1/2 Cup olive oil

1 Cup chicken broth

Procedure:

1. Toss the chicken breasts in the flour and after adding salt and pepper, brown the chicken in a large pot.

2. Take the chicken out of the pot and add the onion, celery, and garlic. Stir and cook until the onion has turned yellow.

3. Add the chicken back into the pot and add the cinnamon, sugar, and red wine. Cook and stir for 5 minutes. If not fond of garlic, remove from the pot now and seek therapy.

4. Add the tomato sauce. Cover and cook until the chicken is tender (40-60 minutes). If necessary, add more liquid from time to time. Usually red wine, but it can be chicken broth or tomato sauce depending on what is needed.

I thought I posted this. Maybe not. Oh well.

On SUN I made Turkey Thighs with a sweet/spicy mustard BBQ sauce and chicken breasts with a spicy bourbon BBQ sauce. I finally figured out the temp control on my charcoal grill. I was able to cook the turkey/chicken for 2.5-3 hours at 200-250 degrees over an indirect heat. Holy shit did these turn out. They were as moist and delicious as anything that I have ever eaten. WOW.

I seared the turkey thighs over the coals for a few minutes then moved them to the indirect heat. After they were almost done I seared them one more time.

I made both sauces myself. Colleen/Jake said they were awesome!!!

My basting bowls :) The hodgepodge of beer wasn't my first choice. It was free beer that had been left at a recent poker party. I simply reached into the cooler and pulled one out. It was always a surprise what it was going to be :)
