But I miss pasta and pizza and other delicious cheesey carbs!

My oldest daughter is always bringing me vegan versions of normal dishes to prove to me “see, it’s the same”. (it’s not). Some are really good however on their own merits.

If you miss cheesy pasta, there is this one dish that is incredible. It’s a fake pasta made out of heart of palm, and a fettuccini style sauce that is basically spices and cashews liquified in the blender. We were skeptical but after the meal the entire family had consensus they’d eat that any time. It’s very low carb.
