How early do you start Thanksgiving? Ours started November 30th, 2019, when we boiled the carcass and made a stock, which is the start of the first gravy. I thawed the stock, and I'm making Gravy One this afternoon.

I always make two gravies. One light one (as above) and one made from drippings caught while smoking the bird. The smoked gravy is then mixed with water from boiling the giblets, with bits of neck and organ meats. Since some people are grossed out by such things, I like to make a second option.

If I liked gravy it would be the meat bits option

11:30 am. Pancetta wrapped scallops with fire-roasted corn salsa. The pancetta is bonded at the molecular level with the shrimp, so there is no need for pesky toothpicks.

3:00p:
Butternut squash soup, with pumpkin oil and roasted almonds.

6pm, the full monty

Edit: +3.5 lbs. I did good this year.
