White - Coffee Old-Fashion

Hmmm... Interesting. So you are mixing the whiskey with the bitters, syrup, vermouth, flavorings, etc., then further aging in the barrel? Then just pour right into the glass and dink? Or into a mixing glass to chill first, then strain into the drinking glass? Or some other method?

I don't add the bitters until I make the cocktail out of the barrel.

I've tried 2 different methods when making the cocktails out of the barrel. Either 1 square ice cube and bitters and pour the cocktail out of the barrel over the one ice cube, or the standard method of mixing glass with ice and bitters, stir, and then strain into a glass with 1 ice cube.

I prefer just the ice cube method for all of them except the Manhattan, which I prefer in the mixing glass.

I need to get one of these barrels. How big is the smaller one? Do you recall where you bought it?

The smaller one is 2L. The larger ones are 3L

The coffee old-fashioned - 2 bottles of bourbon of choosing, and 1 bottle of Mr. Black coffee liqueur (has to be Mr. Black, nothing else).

Maple old-fashioned, 2 bottles of bourbon of choosing, and 6oz of dark maple syrup. It has to be real maple syrup and not crap. Mine was from a local farmers market.

Manhattan is 2 bottle of Rye of your choosing, and 1 bottle of Vermouth (I recommend Antica Formula).

I'm having a hard time going back to a normal straight up Manhattan after switching out the carpano antica for Amaro Montenegro with a big ice cube and orange twist. I also tried Averna Amaro which is thick and dark. Not sure if I like it as much as Montenegro yet...

I'm almost out of Antica. Is this just a different brand of sweet vermouth, or a different liquor? Sorry if this is a n00b question.
