As a point of reference, that beef roast I did had a probe stuck into the very center throughout the cook. I pulled it at exactly 130 and let is rest for 15 minutes before searing and slicing.

I have two different remote probe setups that I no longer use, whether I am grilling or smoking. For me, just not needed any longer. YMMV.

That was a pro tip I wish I had learned earlier, always let it rest a minimum of 10 minutes prior to eating.
 
I’m so happy I got a Weber,
This Weber is now a few months over a year and still looks and performs like brand NEW.... most grills here in Hawaii because of the salty weather would be rotten and falling apart in a year and this GEM is still sparkling..... if you haven’t gotten a Weber now is the time... we grill a lot so it was totally worth the money
