Since I'm obviously not alone here---
---just thought I'd post my figures for starting stacks if you go for a single-table set:
T100 looks like 20k stacks, makes sense with 15/5/11/1 or 15/7/10/1 with up to ten rebuys. Or no rebuys and just throw all the 5k's in to start.
If you want to push it to 25k stacks and still have ten rebuys, you need to snatch up an extra $40k (two or four barrels of 1k or 500 chips) from the singles sale.
T500 could be 200k stacks, either 10/10/7/6, or 8/11/7/6 if you lose/break some 500's. And again up to ten rebuys.

Whatever, I'll do it myself:
if you want to use all 200 of those 25's and also want rebuys then you'd start something like 20/10/2 for $2500. You can't color-up the hundos, but that's fine because they're the best-looking chips. There will be a point not too long into the game where there could end up being only 130 chips total on the table, though, which is pretty low.
It's functional if you start at 25/25 and don't raise the blinds too fast, but I think it's a lot of chips to have in the lowest denom that will eventually leave the table anyway. I'd rather see fewer 25's (120 is a common number, and plenty) and more of the bigger chips instead, just so there are a decent number of them on the table after color-ups. It also gives players some breathing room because they'd have more bets in their starting stacks.
