4 hour spaghetti sauce. Bianco di Napoli tomatoes, ground beef, onion, garlic, wine, fresh oregano, fresh basil, salt, pepper, red chili flakes, demarara sugar, and a pinch of cinnamon

Adding text and pictures from my phone has been behaving odd lately since it always puts the picture at the top and makes it difficult for me to move it around.

We felt like steaks tonight. That craving started when we went to Costco yesterday and saw some pretty tasty steaks on sale

My wife likes hers seasoned simply with salt and pepper. I did a Hawaiian Ribeye for myself https://www.food.com/recipe/houston-s-hawaiian-ribeye-507801
Marinade overnight and taken out an hour before we started to cook. Served with a loaded baked potato and some sautéed veggies.

Could not get the roast I wanted, but hope to be happy with the roast(s) I got.

Dry brine with pepper and coffee starts now. Dinner will be served at 5:30... in 3 days.

Not gonna lie...

This is a practice run for March, utilizing the 3-day dry brine. I want to see if the coffee actually penetrates, or if it just flavors the bark.

Paired with a hasselback sweet potato, finished with sour cream and cilantro
