Dinner Plans? (9 Viewers)

So I experimented a few weekends ago with corn bread waffles.... while dense they were delicious and flavorful...
I love corn bread... but it's always so dry

Was really marbled so was pretty juicy lol

We are lucky to have H-E-B in Texas. Great prices overall and the meat is pretty tasty. If I did it again I’d cook it a little longer but my wife said it was perfect. Generally I like more smoke flavor but she says it would be too potent
 
Went to Costco yesterday and the ribeye rack was too good to pass up

Tomorrow is Mrs Zombie's birthday, so we needed to clean out the leftovers from the fridge preparing for her birthday extravaganza.

Cheesesteak sandwich with a jalapeno dressing, and cheese fries with meatballs.

Started with Purple potato mash, Halibut cheeks with Icelandic Lava Salt, and crisp Prosciutto.

The antipasti; Beef Carpaccio, with Arugula and Celery Heart and a Lemon Vinaigrette dressing. Topped with Cured Kalamata Olives and Parmesan Reggiano.

The salad; Baby Spinach and Avocado with Smoked Pine Nuts. Dressed with a Tarragon Vinaigrette.

The main course; Pepper Crusted Seared Ahi Tuna on a bed of Arugula and Aged Balsamic.
