I'd be pretty pissed off if I harvested live $5's, $20's, and $100's and my players pocketed them. That's theft. As has been mentioned, worst case scenario is that you're out the chips themselves if someone decides to take a souvenir, as you'd still have their cash as long as you only trade chips for cash and don't extend any credit.
