Horse Racing will start about half way through the night once some people have busted out of the tourney and the cash games start up.
In your experience, how long did a horse racing game take? What stakes did you play? Did you just do all transactions in cash?

We have been doing $1/2/3/4 with a $1 ante and the average game was 10-15 minutes and pot was $100-130 or so.

I don't see any cash flying around these pictures. Are you using chips, or the cash didn't make the pictures?
Chips. You can see the pot here — probably about $70-80 (mandalay $1s and stardust $5s next to the board) in there and it looks like the race is about half way to the finish line.

How much would one need to be covered for a game? Did you have anyone "bust" while playing? Like, if they bought in for $20 for quarter chips, (or $80 for dollar chips in your case), would they be pretty assured of making it through 1 game? If they run out of chips mid-game, what happens?

We play it as an out of pocket game. If you run out of chips, you have to buy more.

Most bought in for $120 to have a barrel of $1s and $5s. But a couple guys bought in short. One guy bought in for $40 and needed to add on by the third race.
