Beautiful!

Approximate weight? Temp -- 128?

Started at 124.5, then ramped it up to 127 for the following reasons...
  • I read that sous vide beef looks more red than it's traditional counterpart cooked to the same temp. Because I was cooking for a wide range of people I felt that a little less red would be less likely to "gross out" those people that think a steak should be destroyed.
  • The fatcap did not appear to be breaking down very well at 124.5. the finish (I think it was 9 hours) at 127 did a wonderful job. Fatcap was like gelatin. The internal marbling was buttery-soft but was very visible. I only wish I had taken some pics of the individual slices - they were things of beauty.
 
What is the similarity with American beer and sex on a boat ?

Fortunately, America now produces more terrific beers than anywhere else in the world.

Canada is another matter entirely... :rolleyes:
 
Played our league game on Tuesday, Texas Shootout. We had 4 tables with 34 players in total. I did poorly in the tournament finishing 17th (50% is a pass right?)

Followed up with a cash game with some CC dunes where I ran pretty godly despite not being at the table a lot of the night doing hosting duties. In for $40, out with $525 playing 25c/50c.

This was still early-ish in the night.

Quadrupled up early with AQ where I flopped an A which held. Memorable hand of the night though was where I double straddled to $2, 3 limps then villain in MP makes it $4, 3 more calls back to me and I raise to $24 blind although nobody else knew I was doing it blind. Back to villain who reraises all in to $49. Player to my right calls (has less than $49 total), I look down at J2 off and think to myself "what have I got myself into..." I call figuring I'm donating back to the pot. I end up hitting a wheel on the river.

I'd rather be lucky than good I guess.

My Stack actually got smaller as I ended up with 3 $500 chips in my stack after making change for other players. I don’t know why they hate having having playable stacks on the table. There isn’t a hand played that change isn’t being made multiple times.

I do!!! The action is incredible. I wasn’t even the biggest winner. One guy had the night of his life, he never lost a hand at showdown, all night. He was in for $300 as well and cashed out just north of $4k!!! :eek:

He had never won at the game before, he had a set or full house almost every hand.
