....If you need anything sharper (or serrated) you are cooking your food wrong.

For household purposes, Henckels is just as good steel as Wusthof or any other name brand. I used to have a few Henckels -- replaced them because others just happened to fit my hand better.

Sharper is better when the butcher or cook hasn't, say, trimmed away all the silverskin, or when you'r working around a chop bone -- the sharper knife means less wasted meat.

Any halfway-decent steak knife should do the job if kept sharp. Sadly, most people don't keep their knives at all sharp...
 
I too have several Lamsons... both forged and stamped... I have a small Lamson stamped steel paring knife that is absolutely scary sharp. How sharp?

Mrs Jeff gave me 12 of these for a gift. I can't remember the occasion, but it was a good gift.

We have 50 people with access to the politics forum and over the last two full months we've had six new threads.

Not joining that political thread has improved my quality of life significantly. Sort of like an Eternal Sunshine of the Spotless Mind kind of thing.
 
I’ve been using Wusthof all stainless steak knives for over one year. I needed many (16) and the cost was reasonable. I also wanted knives that were dishwasher safe. I was initially concerned that they’d scratch but they have not after many uses. Also, I tossed the wooden box (that comes with some sets), they go in the silverware drawer, no special treatment.

Note: Apparently some are made in Germany and some in China. I don’t believe there is any difference in quality. You can search eBay for various sets of four or eight and occasionally make out the “made in…” sticker. If you’re buying more than one pack of knives, not that there are at least three slight shape variations.
