Late to the party, but I love tournament director. HAs tons of features I don't use, but it's available. Looks like you can get as in depth as you want. Works great for my 20-30 player tourney. (track buy in and payouts)
I may have missed the information. But does one of those programs allow you to see an estimate time duration? You set your parameter, tell the programme you want your game to last let s say 5h and then it choses the blind structure acordingl?

Not quite what you're asking for, but I use Tournament Director in this way. I set the length of breaks and rounds, and it tells me the duration/start time. I cant input 5 hours, but I can add or subtract or shorten rounds until i get to 5. I have a few preset tournaments with blind schedules.

No. That is user input. They do have several templates but you can make your own, then copy and paste it for each event. Make a baseline, then tweak here or there.
