Moving on to my first aghiorghitiko. Happy Thanksgiving!

We have reached the point where we need a sizable wine fridge. Can’t really find the right one considering rating or price. We need something that holds more than 30 bottle and ideally 70-100. we are only storing reds. ( if capacity is around 30, I’d be buying 2.

Who can give some real advice? @pltrgyst

Sorry, I've never even considered cold storage for reds. My challenge is extending my own life long enough to drink all the wine I already own, not shelling out big bucks to aid my wine in outlasting me.

And I truly hate in when a resto brings out the bottle I've ordered and it's been stored at 60 degrees F. Ugh.

IMHO if you’re not storing for several years then you don’t need a wine fridge. Especially if you live in a climate that doesn’t get super hot. I’m also of the opinion that the average consumer can’t tell the difference between wine that’s been stored optimally be wine that wasn’t. I don’t let it worry me. I have wine that’s over 10 years old (since I bought it) and I’ve been away on vacation with the house at 90F and I can’t tell that it’s any worse off for it.
 
Here in Arizona there is no choice, you have to have a fridge. Personally I have 2 eurocave, but I luckily bought them over 15 years ago when they were expensive but not crazy…. They are great at keeping very stable temperature and have no vibrations.

Why? What temp is your house thermostat set to?

I agree that outside or the garage is not sensible but surely the inside of your house doesn't get that hot?

Temperature in my house in summer can be in the high 70's if I am not home, but more important are the temperature changes which are a killer for wine. I keep my wines at 58 with almost no temperature change.
 
I have read a little about wine ageing and it's clear that it's a poorly understood topic. People store at 13C because that's the temperature in French caves where they stored wine before refrigeration. I think it's one of those things that unless you're a trained expert, you're unlikely to be able to tell the difference between properly stored and improperly stored wine. I'm definitely not a trained expert!
 
Yeah, if 13 to 15C is ideal, any room is too hot and any normal fridge is way too cold.

Yes especially if you keep your wine more than a year or two. I have bottles in my fridge that I have not touched in 10+years, and my oldest bottle is a 1999 Chateau Ausone, and I just drank a couple 1980's wine, I have too much invested to take the risk and too many bottles to leave in a dark closet.
I think in my case, Arizona, there are no other options but too keep wine in a wine fridge.
 
Wine fridges are like yachts - expensive because only rich people buy them. And they're designed to show off your ostentatiousness with a see-through door.

I would get a temperature controller like this https://www.amazon.com/dp/B09DDG4G7X/ and use it with a regular fridge. Can even get one with a clear door :)
 
At some point of time, I 'll get a small one just for reds (whites are OK in a normal fridge) in order just to drink them in the right temperature.
I don't intend any wine to outlive me.
 
Surprisingly delicious and superior blend of Cabernet Sauvignon, the indigenous Aghiorghitiko (Saint George) and Mavrodaphne .
Mega Spilaio, meaning Grand Cave, a venerable Monastery in the Peloponnese, expectedly treated by the Wehrmacht back in the day (totally destroyed and all monks murdered).
Find it if you can, and drink it! :)

Excellent choices, more or less.
Just try to grab some Papaioannou label from Nemea, either the local Aghiorghitiko (Ktima), or Cabernet Sauvignon (Cava).
